Brie & Cherry Phyllo Cups

I made these a while back and served as appetizers at a small dinner party. Awesome with a glass of white wine, rose, or even prosecco before a meal and really easy to prepare.

Brie & Cherry Phyllo Cups

You'll need:

  • 24 phyllo pastry cups, thawed (you can find in the freezer aisle near frozen pastry) or make your own
  • 8 ounces of double or triple cream brie cheese (splurge for the slightly better stuff, it's worth it)
  • 1/2 small jar of cherry preserves (you could also use raspberry, blueberry, apricot, etc.)
  • 1/4 cup of finely chopped walnuts
Now do this:

Preheat oven to 350 and line baking sheet with tin foil

Line phyllo cups on sheet 

In a food processor, place cubes of brie (with rind) and pulse until creamy

Spoon equal amounts into cups leaving 1/4 of cup for fruit and nut topping

Spoon cherry preserves in each cup to top and sprinkle with chopped nuts

Bake until cheese bubbles and slightly browns around edges (about 10 minutes)
